You have to Make Tacos Tonight

Did you know that today was National Taco Day? I agree, it should be a holiday we get off of work so we can go out and eat all the free tacos we can get our hands on. But at-last, it’s not, so instead lets make tacos for dinner tonight. Now tacos aren’t very hard to make, it basically just seasoned meat, the dressings, and a taco shell. Searching the internet, you can find hundreds of recipes for a great taco, we’re going to pick a simple taco meal since it is a week night. Lets dive in.


  • 1 1/2 pounds boneless skinless chicken thighs
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 tablespoons olive oil
  • 2 teaspoons ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon chile powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon chipotle chili powder
  • 1/2 teaspoon onion powder
  • 1/2 red onion diced
  • 1/4 cup cilantro
  • 1 lime, juiced
  • 8-12 tortillas (corn or flour)
  • 4 oz queso fresco cheese
  • 1 avocado sliced

Chipotle Lime Crema (optional)

  • 3 tablespoons Greek yogurt
  • 3/4 cup half and half
  • 1 tablespoon adobo sauce
  • juice of half a lime
  • zest of half a lime
  • 1/8 teaspoon salt


Preheat your oven to 375 degrees F. In a skillet add you olive oil and once hot add your chicken. Season your chicken with salt and pepper and brown both sides. Place your chicken in the oven and roast for about twenty minutes. In a separate bowl, combine cumin, paprika, chile powders, garlic powder, and onion powder. In another bowl combine onion, cilantro, and lime juice, you can also add tomatoes and make your own pico de gallo.

In a separate bowl, combine yogurt, half and half, adobo, lime juice, zest, and salt, whisking well until all is combined. After the chicken is done cooking, shred it and add the spice mixture that you made. All you need to do now is assemble your tacos. Add whatever fixings you like and have an amazing chicken taco dinner that only took about twenty minutes to make!
